I never had Lentil soup growing up. We had oxtail soup that my mother made from scratch because my father was a butcher and brought home this kind of meat product. I made chicken soup from scratch with a whole small fryer, an onion and carrots, celery, etc. that was delicious. It took a friendship with Jack, who turned out to be a Syrian named Omran that gave me his recipe for Lentil soup, and I made it. It was delicious.
Here's what we used to make the soup. I can't remember using all this; cumin, Cinnamon, Allspice, black pepper, salt, lemon, red pepper, and the greens-parsley? olive oil? what am I making here? Where are the lentils? Omran Alhalabi in his cooking days.Here at assisted living, we are served Lentil soup quite often and it's full of lentils. It looks more like this Greek recipe:
